Stuffed Red Peppers For Dinner

Here's gluten-free, dairy-free option for dinner.

It's easy to make!

And you can probably get kids to help out. This gives them more touchpoints 🤚 with food, making it easier for them to try new things.

Here's the simple recipe...

Ingredients:

  • 4 large bell peppers, halved and deseeded
  • 1 cup quinoa, cooked (1/2 cup dry quinoa with 1 cup water)
  • 1 lb ground organic turkey
  • 1 cup diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Olive oil
  • Salt and pepper to taste

Instructions:

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  • Add ground turkey, cook until browned. Stir in tomatoes, cooked quinoa, cumin, paprika, salt, and pepper.
  • Fill bell pepper halves with the turkey-quinoa mixture.
  • Place stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes. Uncover and bake for an additional 10 minutes

Notes from my video:

💟 I did not use the garlic and onion due to a current allergy to these. If you use it (and I recommend you do!), cook that prior to adding the turkey to the pan.

💟 I only used 2 red peppers, as I didn't want to make the full recipe. For a whole family, do make the entire recipe.

💟 I did use the full pound of ground turkey and the full cup of quinoa and had extras of those.

💟 Adapt the recipe to your family's tastes! Maybe adding beans (like white northern or canellini), zucchini or carrots would taste good to you!
