Quinoa with Veggies

When I suggest parents include in an autism diet gluten free options, they are often at a loss of what to use instead.

Here is an option for a protein-rich grain substitute - quinoa.

It's a pseudocereal related to spinach and amaranth. The seeds are rich in protein, fiber, B vitamins and minerals in amounts greater than in many grains.

Add in some green veggies and you have a yummy vegetarian/vegan source of protein and vegetables.

Here's the quick and easy recipe...

Ingredients:

  • 1 cup organic quinoa
  • 2 cups water
  • 1/2 1 cup frozen peas
  • 1 cup fresh or frozen zucchini
  • 1 cup chopped organic spinach
  • Salt and pepper to taste
  • other spices you can add: onion powder, garlic powder, your spices of choice

Instructions:

  • Add quinoa to water in a pot. Add zucchini and peas.
  • Bring to a boil.
  • Lower heat so that the quinoa is simmering.
  • Cook for 13 minutes.
  • Add chopped spinach, stir around, cover, and cook for an additional 2 minutes so it's wilted.
  • Serve warm.
  • Reheat on the stovetop with a bit of oil in the pan.
