Massaged Kale Salad
This is a salad you 'massage', or literally squeeze the leaves in your hands. It's a wonderful opportunity to get little one's hands on a new food, squishing, touching, smelling, maybe even tasting!
And the recipe is...
Ingredients:
- 1 bunch chopped kale, ribs removed
- 1/2 chopped red pepper
- 1/4 cup black or kalamata olives
- 2 Tbsp capers
- 1-2 Tbsp sunflower seeds or walnuts or other nut
- 1/8 cup cranberries
- 4 oz feta cheese (if you're doing dairy)
- juice of 1 lime
- 2-3 Tbsp Olive oil
- Salt and pepper to taste
Instructions:
- Place chopped kale in a bowl. Add olive oil and lime and 'massage', or squish around with your hands until leaves are well coated. Let it sit for 1+ hour (in the fridge if it's hot in your kitchen)
- Add all the other ingredients and mix.
- Serve and enjoy!
Notes from my video:
💟 I don't usually measure things because I've been in the kitchen so much that I just know how much to put in. Please don't be intimidated by that - you can get that adept too!
💟 I used sunflower seeds instead of walnuts because I didn't have walnuts. Please use whichever nuts work for you and your family.
💟 I use all organic ingredients and suggest that you do the same. At the time of this writing kale is a highly sprayed (pesticides) vegetable.
💟 You may use just the kale, olive oil and lime (maybe add in nutritional yeast if your child can handle yeast) and dehydrate it to make it crunchy. Put in oven at 200 degrees F for 20 minutes.
